Easy, Gluten-free Apricot Cobbler

I had the opportunity of picking fresh apricots from my grandmother’s tree on the way to a cabin we rented for a vacation with my extended family. A storm had come the night before and knocked hundreds of ripe apricots on the ground, but we were able to pick another 100 or so that were in good condition.

For dessert our first night at the cabin, I made a cobbler with the apricots and ingredients we had on hand. The goal, as always, is to make a delicious, healthy dessert that could be eaten guilt-free, with no bloating or sugar crash afterwards. 



Ingredients: 

  • Apricots, I used about 20 because they were small. But use a fruit of your choice

  • Raisins, 2 tablespoons

  • Honey, 1/3 cup

  • Oats, 1 1/2 cups

  • Pistachios, 1 cup shelled

  • Cinnamon, 1/2 teaspoon

  • Coconut oil, 2 tablespoons



Instructions:

Preheat oven to 350 

For the filling, cut up the fresh fruit and put at the bottom of a glass baking pan. Add the raisins and about 1 tablespoon of honey over the top.

For the crust, combine the oats, pistachios, and cinnamon into a blender until fine. In a bowl, mix the coconut oil and honey until smooth, and then add in the dry ingredients. Press the crust on top of the fruit into an even layer.

That’s it! Put into the oven and bake for 30 minutes or until top is golden brown.
